Aubergine Melts | Recipe


This is a delicious, easy and quick dish which is sure to go down a treat! 


Cooking Time: 35minutesServes 3-4 people
Oven Temperature: 180°C Fan/ 356°F/ 


Ingredients:
2 Large Aubergines
1 Large Ball Mozzarella
4 Large Vine Tomatoes
3 tbsp Olive Oil
Handful of Fresh Basil

Method:
Step 1: Cut the aubergines in half and place them dow, inside up in an oven tray. Next, drizzle the tops with a thin layer of olive oil (don't pour it all in one place as the aubergine will soak it up very quickly. I would reccommend taking a brush and lightly brushing them all over).



Step 2: Place them in the centre of the oven for 25-30 minutes until they turn golden in colour. Whilst they are cooking, cut the tomatoes and mozzarella into rings. I place them into four lines (one tomato for each aubergines with about four slices of mozzarella)


Step 3:  Once the aubergines are brown, take them out of the oven and start placing the tomatoes then mozzarella on top so that all the tomatoes are covered. The key here is to not have the tomatoes overlapping too much otherwise they don't soften as easily (I had this problem with the one on the far left).



Step 4:  Place them back in the oven for 5-10minutes or util the cheese has all melted and it's steaming hot. Once done, Take them out of the oven and sprinkle a handful of the torn up fresh basil over the tops and serve. I would reccommend serving them with spinich leaves and a side of coucous with roasted peppers and feta cheese - a taste sensation - or you could just have them as they are (they're quite filling)! 


This is how I made it the first time and it was absolutely delicious!

Another idea I had it to cut the aubergine into rings and place them in the bottom of an oven proof dish, placing them in the oven for about 25 minutes. After this just add the tomatoes and cheese as normal, sprinkle with the basil then serve. I think this would be a lot better if you are thinking of making this for quite a few people or want something a little bit easier to eat.
